AZUKI BEANS
½ cup azuki beans
A piece 7 cm. Long of kombu seaweed
2 cups
of water
Unrefined seasalt
Cut the kombu seaweed into pieces about 1 ½ cm. Sq. Place it at the bottom of the pan. Add washed azuki beans and water. Bring Azuki to a boil on high fire. Then lower the flame and let it simmer between 1 - 1 ½ hours, until the beans are tender. Add a little unrefined seasalt.
Azuki beans are very benefical for the kidneys. They are one of the best
beans that one can eat on a regular basis.
Sometimes one can add pumpkin or
squash about 15 - 20 minutes before turning it off, and that makes it very rich
in iron.
We highly recommend the use of kombu seaweed when one is cooking
any kind of beans or lentils. This marvellous product that comes from the sea is
very rich in minerals , keeps us young and much healthier. When you add kombu in
beans it helps you in its digestion.
